Yaya's Donner Kebab

2-3 servings 


½ cup Tzatziki sauce

1pkg Yaya cheese

1 Iceberg lettuce

2 Tomato

½ red onion thinly sliced

6 Mint leaves thinly sliced

2-3 pita

1-2 TBSP cooking oil


Cut Yaya cheese in ½ in plank cross wise and set aside. Thinly slice iceberg lettuce by cutting it in half on the stem end. Then cut out core and cut in half to make 4 quarters, and then thinly slice crosswise and set aside.  For the tomatoes cut crosswise and slice in about ¼ in to ⅓ in rounds and set aside. Roll the mint up from the length side into a tight tub and thinly slice crosswise making thin ribbons and set aside. Take half a red onion and thinly slice it and put it in a bowl of cold water, and let it soak for 10-30 mins and then drain water. 

In a medium frying pan, add oil and place on medium heat. Let it heat for about 1-2 mins and then add cheese. Fry on both sides till golden brown. Set on top of plate with paper towel to soak up excess oil.

Heat the pita up in the oven at 325 F for about 3-5 mins. Once warm cut in half and with knife gently separate the pita to form a pocket.Once separated  in a layer add a bit of shredded lettuce, add a little bit of red onion, 1 TBSP tzatziki, cheese and sprinkle some mint and then add a bit more lettuce and tomato. Then enjoy!
