Yaya’s Halloumi Cheese With Pesto and Mixed Berries

  • 2 Package’s of Yaya’s Halloumi Cheese

  • 1 lb mixed berries (strawberries, raspberries, blueberries)

  • 1 lemon

  • Balsamic Vinegar

  • Pesto

  • Olive Oil

  • Pepper

Directions:

  1. Cut the Halloumi cheese crosswise in 1/4 inch pieces.

  2. Take a medium non-stick pan and place heat on medium, adding 1 tablespoon of oil to the pan. Once the pan is heated, place sliced cheese into the pan to sear.

  3. Cook for about 2-3 minutes, until both sides are golden brown. Transfer the cheese on a plate with a paper towel to soak up excess oil. Let it cool.

  4. While the cheese cools, zest the entire lemon and cut it in half.

  5. Quarter the strawberries and add them into a bowl along with the blueberries and raspberries.

  6. Add 2 tablespoons of olive oil, pepper, lemon zest, and the juice from 1/2 of the lemon. Toss ingredients and add more lemon juice to taste.

  7. Once the cheese has cooled to room temperature, spread the pesto on the cheese, and add the mixed berries on top. Drizzle balsamic vinegar and finish with a fresh crack of pepper.
