Yaya’s Halloumi Cheese Tiki Masala

  • 1 Package of Yaya’s Halloumi Cheese

  • 2 TBSP of butter

  • ¼ cup Tomato paste

  • ½  cup of veg stock

  • ⅔  cup of  Cream

  • 2 TBSP Garam masala

  • 1 TBSP Turmeric

  • 1 small Onion diced medium size

  • 2 Garlic cloves crushed and minced

  • Pepper

  • Salt

  • 1 tsp red Chili pepper

  • Basmati rice or naan bread

Directions:

  1. Cut Yaya’s Halloumi cheese into 1 inch cubes.

  2. Put a medium sized pot or saucepan on the stove and set heat to medium, add butter and let it melt. Once melted add onion and garlic and cook. Add a  pinch of salt and 2-3 cracks of pepper. 

  3. Keep cooking until onion becomes translucent. Once translucent add garam masala, Turmeric, and red chili pepper and sauté till fragrant of spice is smelled. 

  4. Once you can smell the spices add the tomato  paste and continue cooking for about 1 to 2 mins. Then add stock and scrap the bottom of the pan to deglaze. Add Cream and continue to stir. 

  5. Bring Sauce up to a boil and then reduce heat to a simmer. Sauce should start to thicken in about 5-8 mins of simmering.  Add in halloumi cheese and stir. Cook for 3 mins and it is ready to serve with naan or basmati rice.
